    She didn’t set out to launch a men’s clothing store. In fact, opening Salt for Men, one of Boise’s most elevated menswear boutiques, wasn’t even on her radar—until customer demand made it impossible to ignore.

    What started as a women’s boutique, Salt by Pepper, quickly became a destination for stylish women in the Treasure Valley looking for a refined, curated shopping experience. But while dressing women was the original vision, something surprising kept happening.

    “The men started asking,” she says, smiling. “They’d come in with their partners, wait while they shopped, and start saying, ‘Why isn’t there something like this for us?’”

    It was a fair question. Boise has no shortage of outdoor gear shops and casual basics—but what about a place for the modern man who wants timeless, clean style with a slightly European edge? Not trendy or flashy. Just thoughtful fashion. Elevated, intentional pieces that speak without shouting.

    That’s when the idea for Salt for Men took root.

    “I didn’t want to do just another store with flannels and joggers,” she explains. “This is about creating a full lifestyle experience for men who appreciate quality. We’re not trying to be everything to everyone. We’re very clear on who we serve.”

    “The fit, the feel—these are pieces that guys try on and immediately get. One of our bestsellers is this sleek button-up that we reordered three times. Every guy who tries it on buys it. It’s that good.”

    She was originally hesitant to bring in higher-end lines. “I thought, ‘Is Boise ready for this?’ But the men are showing up—and they’re ready.”

    While Salt by Pepper continues to serve women with an equally curated collection of fashion-forward pieces just down the way, Salt for Men is fully dedicated to menswear—without compromise. The two boutiques are distinct but complementary.

    “Sometimes couples come in together, and each goes to their store. One weekend, a woman visited Salt by Pepper after her partner had shopped here the day before. Two weeks later, they were back—each heading to their boutique.”

    The store has also quietly attracted attention from a more unexpected crowd. “We’ve had an NFL player come in, a Boise State coach, a musician passing through, and many professionals. But we also have younger guys in their 30s coming in to build their wardrobe.”

    Cory, a former employee turned entrepreneur, has created a fully self-contained, year-round farm producing some of the most sought-after organic mushrooms like Lion’s Mane, King Trumpets, Chestnuts, and a variety of Oysters. But don’t picture sprawling fields. Here, the future of farming is vertical, misty, and highly technical — all happening indoors.

    How It Works: A Farm Inside Four Walls

    Step inside Basidia Farms, and you’ll find rows of cultivating mycelium colonizing bags (soon-to-be mushrooms), high-tech humidifiers, and neat stacks of misting fruiting chambers. Every step of the mushroom-growing process is meticulously controlled. It starts with oak and soy pellets, which Cory processes into 12-pound

    bags of substrate. These bags are steamed at 200 degrees to sterilize them, cooled for several days, and then moved into a lab where they are inoculated with organic liquid cultures.

    From there, the mycelium (the root-like structure of mushrooms) spreads throughout the bags, turning them snowy white. Once fully colonized, they are “cold shocked” in a cooler area to trigger fruiting, slit open for air exposure, misted carefully, and moved into fruiting chambers where the mushrooms finally grow out.

    The whole system is a dance between temperature, humidity, and airflow — all to recreate the perfect outdoor environment inside a controlled, year-round facility.

    “This is what you call an urban farm,” Cory says. “I’m not on acres of land. I’m doing it all indoors, and I can grow no matter the season — rain, snow, or shine.”

    A One-Man Organic Powerhouse

    Currently, Cory is selling directly to the public at local farmers markets across the Treasure Valley. “Right now, farmers markets make the most sense because I can sell retail,” he explains. “Later, in the off-season from October to May, I’ll supply to restaurants once I have more volume.”

    Basidia Farms is already starting to supply co-ops in Meridian and Boise with gourmet varieties. Plans are in place to expand into direct sales to local restaurants looking for high-quality organic mushrooms — especially popular Lion’s Mane, known for its health benefits and incredible culinary texture.

    And Cory is doing it the right way: clean, organic, and vegan. He’s currently finishing his USDA Organic Certification — a huge milestone that sets Basidia Farms apart.

    This isn’t just a short-term venture. Cory has a bold vision for Basidia Farms:

    • Self-sustainability first — being able to fully cover costs and hire staff.
    • Educational tours for high schools and colleges to inspire future urban farmers.
    • On-site commercial kitchen approval for dehydrating and processing mushrooms into premium products like Lion’s Mane powder — a booming market for health and wellness enthusiasts.
    • Expansion into medicinal mushrooms like Reishi, Cordyceps, and Turkey Tail for specialty supplements and blends.

    “There’s huge potential,” Cory says. “When you dehydrate and powder mushrooms, the value quadruples — plus, they’re shelf stable for years without additives. It’s all about staying pure and organic.”

    Boise Airport Proposes New Food, Beverage and Retail Options To City Council

    Boise, Idaho – New options for food, drinks and retail are on their way to the Boise Airport beginning this fall.

    The Boise City Council will be asked at a meeting later this month to approve new contracts for airport concessions operators Paradies Lagardère for retail and Delaware North for food and beverage.

    Upon approval of the contracts by City Council, all current food, beverage and retail options offered at the Airport will begin to transition to new concepts or be updated.

    In addition to welcoming national favorites like Starbucks, Protein Bar & Kitchen, Pizza Hut and Wendy’s, local brands like Flying M Coffee, The STIL, Waffle Me Up, Blue Sky Bagels, Form + Function, Turas Flights and Bites by Telaya Wine Co., and a Treefort-branded restaurant will be included in the Airport’s concession program. Bardenay, a proven passenger favorite, will remain and the design will be reimagined.

    The local concepts will be carried through into the retail side as well, including regional beer and wines, Idaho Candy Company, Buy Idaho products, and many more local artisans and products. Retail store themes will pay homage to distinctly Idaho staples like the Capital City Market, the Boise Depot and the Sawtooth Mountains to reflect and connect to our region.

    Both Paradies Lagardère and Delaware North hold the current contracts for airport concessions.

    Earlier this year the Airport went through a public solicitation process to seek proposals from qualified firms for food and beverage and retail concessions operations. Multiple responses were evaluated by the diverse evaluation committees before selecting operators for the new 10-year agreements.

    If approved by City Council, construction of the new retail shops, restaurants and cafés could begin as early as October 2024. Construction will be phased to ensure adequate concessions for passengers remain available throughout the duration of the project. The Airport plans to hold an open house event later this summer to introduce the public to the new options.

    Details of the projects:

    • Flexible and self-directed technology options will help expedite service. Passengers can expect mobile ordering, QR code-ordering at table and self-operated kiosks at food and beverage locations. Guests can also order at the counter or from a server.
    • Self-checkout, Scan Pay & Go from mobile devices, payment via digital wallets, and a wide range of vending options will be offered on the retail side.
    • Additional square footage has been added to the food and beverage program in the food court and with a new 400-square foot wine bar and small bites café on Concourse C.
    • Breakfast, lunch and dinner will be served at all food concessions.
    • The retail kiosks on Concourse B will be converted into smaller grab-and-go offerings from vending machines, which will help alleviate passenger congestion in the area. Multiple other vending opportunities will be added at key points throughout the terminal to expand food options.
    • The largest retail shop will include “store within a store” concepts such as Banana Ink, Herschel Supply Co., and No Boundaries, a store concept that carries brands like Cotopaxi and KÜHL.
